Delish Hot Chocolate

  • Vanilla Pod split and seeds scraped out
  • 500 mls double cream
  • 500 mls whole milk
  • 285 grams plain chocolate, chopped into pieces
  • Sugar to taste
  • Vanilla Powder, or Chocolate powder for dusting. (Optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon Amaretto or Curacao (optional but delish)


In a suitable sized saucepan add milk, cream and the vanilla pod with seeds. Gently heat until you see a slight bubble in the mixture around the edges of the pan & remove from heat and allow to steep for 10 minutes.

At this point add your sugar and vanilla extract and gently heat until you again see the mixture start to bubble.

Meanwhile in another saucepan add your chocolate and when your cream mixture is ready, remove the vanilla pod ( wash and pat dry your vanilla pod as this can be used again to make your vanilla sugar).

Slowly pour the cream mixture over your chocolate whilst whisking until the chocolate has thoroughly dissolved.

Finally return the mixture to a gentle heat add or not your optional tipple (which ever one is delish) whisking until you have a frothy top and dispense into your favourite receptacle and dust with vanilla/chocolate powder. NB take care as the choccy is very hot & enjoy!! .

When your fudge mixture has fallen to 110c you can start to beat the mixture with a wooden spoon.
